This interview is with Andrew Waterhouse, Professor Emeritus of Viticulture and Enology. After 5 years in the Chemistry Department at Tulane, he accepted an appointment in Viticulture and Enology in 1991 and retired in 2022.
His teaching focused on wine chemistry and the chemical analysis of wine. His research focused on the role of phenolics, including resveratrol, and other anti-oxidants in wine. His studies expanded to look at wine oxidation, with some investigations of antioxidants in chocolate and the causes of "red wine headaches".
His administrative service includes service as Chair of Viticulture and Enology, Director of the Robert Mondavi Institute, Chair of the Graduate Council and Assoicate Dean of Graduate studies. He has received numerous awards including a UC Davis Chancellor’s Fellow award, an Honorary Doctorate from the University of Bordeaux, and the John E. Kinsella Chair in Food, Nutrition and Health.
